Salmon with the Greenest Tahini Sauce, Shaved Radishes, and Cucumbers

5 salmon fillets
salt and pepper

Bake at 350.

4 radishes, slivered
1 small cucumber, sliced thinly
1 T mint leaves
1 T chopped flat-leaf parsley
1 t lemon juice
1/4 t lemon zest

Toss together and serve with fish.


2 garlic cloves
1 bunch watercress
1 cup mint leaves
1/2 cup parsley
1/2 cup tahini
2 T lemon juice

Briefly cook garlic, watercress, mint, and parsley.

Blend all ingredients together and serve.
