Root Vegetable Minestrone

1 medium onion, chopped
1 large carrot, chopped
2 T olive oil
1 t fennel seeds, crushed
2 garlic cloves, peeled and sliced
2 T tomato paste
1 large parsnip, peeled and cut into 1 inch pieces
1/2 large celery root, diced
2 medium golden beets, peeled and cut into pieces
1/2 t dried oregano
salt and pepper
4 cups chopped cabbage
1 28-oz can tomatoes
1 can cannellini beans
1 bunch kale
red pepper flakes
