Roasted Vegetables with Caramelized Onion Mayonnaise

1 head of broccoli
2 red, yellow or orange bell peppers
1 head of cauliflower
1/4 cup ghee, melted
Caramelized Onion Mayonnaise

Roast veggies and ghee at 400 degrees for 20 minutes.


Caramelize 1 yellow onion in 2 T olive oil

Combine 2 lg egg yolks, 1/2 t Dijon mustard, juice of 1 lemon, 1/2 t salt. Blend for 30 seconds. Very slowly add 3/4 cup coconut oil. Add onion. Serve.
