Mu Shu Vegetables with Pancakes

8 thin pancakes
4 medium scallions
1 3-inch piece of ginger
3 garlic cloves
1/2 lb baby bok choy
1 medium red bell pepper
8 ounces mushrooms
2 T coconut oil
2 large eggs
salt
2 cups bean sprouts
1/2 cup unsalted roasted cashews

Saute veggies, scramble eggs, and serve rolled up in a pancake.
