Maple-Roasted Chicken with Maple Gravy

1 lemon, cut in half
1 whole organic chicken
1/4 cup olive oil
3-4 sweet potatoes
4 shallots, cut in half
1/2 cup maple syrup

MAPLE GRAVY:
1 T coconut oil
1 shallot, finely chopped
1/2 cup chicken stock
1/2 cup drippings fro Maple-Roasted Chicken
2 /1/2 cups coconut milk cream
1 t arrowroot powder
salt and pepper

Preheat the oven to 400 degrees. Place lemon inside cavity of chicken. Rub chicken with olive oil and season it with salt and pepper. Place in roasting pan.

Add potatoes and shallots.

Roast for 30 minutes. Put maple syrup and 1/4 cup olive oil over chicken, then lower the oven temperature to 375. Roast for 45 minutes longer.
