Honey-Roasted Parsnips and Beets

1 lb parsnips, peeled and cut into 1/4 inch coins
1 lb beets, peeled and cut into 1/4 inch slices
1/4 cup ghee
1/4 cup honey
1 T coconut vinegar (add after baking)

Bake at 400 degrees for 30 minutes or so.
