Crispy Sweet Potato Cakes with Cilantro Salsa

Cilantro Salsa

4 garlic cloves, minced
1/4 cup fresh lime juice
2 large bunches of cilantro, chopped
1/2 t Celtic sea salt

Sweet Potato Cakes

3 large sweet potatoes, spiralized or shredded
4 scallions, chopped
2 large eggs, beaten
2 t cassava flour
1 t coconut flour
1 t salt

1 cup lard

Combine salsa ingredients.

Place potatoes, scallions, eggs, flour, salt and 1 cup cilantro salsa in large bowl. Toss. Preheat oven to 200 degrees. Set a cooling rack on top of a baking sheet.

Heat the lard in a large skillet over med high heat. Drop 1/4 cup mounds of mixture into hot tallow, gently pressing with a spatula to flatten to a disk. Fry until golden brown on both sides.
