Rice Pudding

2 cups milk
1 cup cooked rice
2 eggs
2 T brown sugar
2 T maple syrup
1 t vanilla
1/2 t lemon zest
1/3 t cinnamon
pinch of grated nutmeg
1/3 cup raisins

350 degrees.

In a medium saucepan, heat the milk and rice to a slow simmer, stirring frequently.

In a separate large bowl, combine the eggs, sugar, maple syrup, vanilla, lemon zest, cinnamon, and nutmeg. Add the egg mixture to the milk and rice mixture and simmer for an additional 5 minutes. Add raisins. Pour into casserole dish and bake for 20 minutes. Cool before serving.
