Marshmallow Cream

2/3 cup granulated sugar (coconut sugar?)
1/4 cup water
3/4 cup honey
3 egg whites
1/4 t cream of tartar
1 t vanilla

Combine sugar, water, and honey in saucepan over medium heat and bring to a boil, stirring often. Cook until mixture reaches 246 degrees, continuing to stir every so often. Remove from heat and let cool slightly while you prepare your egg whites.

In the bowl of your stand mixer, beat the egg whites and cream of tartar until soft peaks form.
Add a couple spoonfuls of the warm sugar mixture to the whipped egg whites and combine.

Turn the whisk attachment on low speed and slowly drizzle int eh remaining mixture. Once fully incorporated, add vanilla and turn the speed to hight. Beat the mixture until light and fluffy, about 10 minutes.
