Rice and Veggie Bowl

Saute the following dice vegetables in a large skillet:

3 red, orange, or yellow bell peppers
1 red onion
2 zucchini
8 oz mushrooms
3 green onions

Add one can of pinto beans.

Sprinkle in 3 T coconut aminos and 1/4 t pepper.

Serve over brown rice with salsa and Vegenaise.
