Raw Cheesecake

CRUST

1 1/2 cups raw pecan or walnt halves
2 T maple syrup
2 T melted coconut oil
1/8 t sea salt

FILLING

2 cups raw cashews, soaked for 2 hours, drained well, and rinsed
1 cup peeled and diced zucchini
3 T freshly squeezed lemon juice
1/4 cup melted coconut oil
1/2 cup honey
1 t vanilla
1/4 t sea salt

Blend zucchini seamlessly into filling. Pour into crust. Chill until time to serve.
