Peppermint Fudge Bars


1 1/2 cups almond meal
3 T melted coconut oil
3 T maple syrup
1/4 cup raw carob powder
1/8 t sea salt


3/4 cup maple syrup
1 level cup carob
1/2 cup melted coconut oil
3/4 t pur peppermint extract

1. Line a 9-inch square baking dish with parchment paper.

2. Prepare the curst: Ina medium mixing bowl, combine all the crust ingredients and mix well to create a thick and sticky sought. Press the dough evenly into the bottom of the lined baking dish and set it aside while you prepare the filling.

3. Prepare the filling: Combine all the filling ingredients in a medium mixing bowl and whisk them together until completely smooth, with no clumps of carob powder remaining. Pour the filling over the prepared crust and smooth the top with a spatial. Place the pan in the freezer to chill until firm, about 30 minutes.

3. Cut into small squares and serve chilled. Store int eh freezer for very firm squares or in the fridge for a softer mint chocolate filling.
