Dark Chocolate Pudding

1 cup almond milk
2 rip avocados, pitted
1/2 cup carob powder
1/2 cup plus 2 T maple syrup
2 t vanilla extract
Pinch of sea salt
Handful of ice cubes (optional)

1. Combine the almond milk, avocados, carob powder, maple syrup, vanilla, and salt in a high-speed blender or food processor and blend until smooth and creamy. For a cold pudding that you can serve immediately, add a handful of ice cubes to the mix. or simply place the blended pudding in the refrigerator to chill completely before serving, about 2 hours.

2. Spoon into individual bowls and serve chilled.
