Blueberry Muffins

3 cups spelt flour
1 cup coconut milk
1 cup pure maple syrup 
1/2 cup coconut oil
1 T apple cider vinegar

Combine liquid ingredients in a large bowl. Add flour and mix well. Cover, and let sit overnight on the counter.

In the morning, add:
1/4 t celtic salt
1 T baking powder
 2 eggs
1 t vanilla extract
1 cup blueberries

Preheat oven to 350 degrees. 

Fill muffin papers 2/3 full. Bake approximately 30 minutes, or until golden brown on top.

Cool before serving.
