Chicken Salad

2 c cooked shredded chicken
8 stalks celery, finely chopped
2 Granny Smith apples, diced
1 cup parsley
1/4 cup veganaise
1/4 c Dijon mustard
1/4 t sea salt
1/4 t pepper
1 head romaine lettuce
