Raw Tacos

1 head romain lettuce, washed
1 medium carrot, thin matchsticks
1 cup cucumber, diced small
1 avocado, cubed small
6 basil leaves, chiffonade

Red pepper-cashew spread:

1 cup cashew, soaked 3 hours
2 T tamari
1 T maple syrup
1 T apple cider vinegar
1 lemon, zested and juiced
1 cup red bell pepper, chopped
Sea salt
cayenne

Blend first 5 ingredients until smooth. Add the rest.
