Lemon Cupcakes

2 T oil
2 cups spelt flour
1 c maple sugar
1/2 t baking soda
1 t baking powder
1/4 t sea salt
2 T lemon zest
1/4 c lemon juice
1 c rice milk
1 T apple cider vinegar
1 t vanilla
1 t lemon extract

350 degrees. 20 minutes.

frosting:

cashews
1/2 cup maple syrup
1 T vanilla
1 t lemon extract
2 T lemon juice
1/3 c maple sugar

2 T arrowroot
1/2 c coconut oil??

Combine all ingredients in food processor. Slowly add coconut oil??
