Red Lentil and Colorful Vegetable Soup

2-4 T butter
1 large onion, diced
1 celery rib, diced
4 carrots, diced
1 cup diced winter squash or zucchini
3 T cilantro stems
salt and pepper
1 t turmeric

1/2 t cumin
1 cup diced tomatoes
1 cup red lentils, rinsed well
juice of 1 lime
4 scallions, including an inch of greens, sliced
