Pickling Spice and Fermented Pickle Recipe

Pickling spice:

2 tablespoons mustard seed
1 tablespoon whole allspice
2 teaspoons coriander seeds
2 teaspoons cloves
1 teaspoon of ground ginger
1 teaspoon dried hot red pepper flakes
1 bay leaf, crumbled
a 2-inch cinnamon stick, crushed fine
In a bowl combine all the spices. Keep the mixture in a tightly sealed jar in a cool dark place for six months. Makes 1/3 of a cup.
