Garlic Spelt Baguette

3/4 cup warm water
1 T honey
2 cloves garlic, grated
2 t yeast
1 t Celtic sea salt
2 T vital wheat gluten flour
1/4 cup nutritional yeast
2 cups spelt flour
1/2 t olive oil, to coat bowl
1 T olive oil
1 t dried basil

Combine water, honey, and garlic.
Combine yeast, salt, gluten, nutritional yeast, and flour.
Combine wet and dry ingredients.
Knead for 8 to 10 minutes.
Let rise until double.
Shape into 10-inch baguettes.
Preheat oven to 400 degrees.
Combine olive oil and basil. Brush the baguette with the oil mixture. Sprinkle a little flour on top. Cove with plastic wrap, and let rise for 30 minutes.
Remove the plastic wrap. Bake for 20 minutes, until the baguette is golden brown. Cool on wire rack.
Dip in olive oil and balsamic vinegar.
