Pancakes

2 cups whole-grain spelt flour
1/2 t Celtic salt
1 1/2 t baking powder (aluminum-free)
1/2 t baking soda
1/2 cup water
1/4 cup olive oil
1 1/2 cups rice or almond mild
1 t apple cider vinegar
1 t vanilla extract

Combine dry ingredients in large bowl.
In medium bowl, combine wet ingredients.
Add wet ingredients to dry ingredients. Whisk well.
Cook on lightly oiled griddle or pan.
Serve with pure maple syrup, 100% fruit jelly, fresh fruit, or any other natural topping.
