Cardamom Coconut Rice Pudding

2 1/2 cups cooked brown rice
2 1/2 cups coconut milk
1/2 cup natural sweetener
1/2 t ground cardamom
Pinch of salt
1/2 cup coarsely chopped raw pistachios
1 1/2 t vanilla

Combine first three ingredients in saucepan and simmer on low for 20 minutes. Stir in remaining ingredients and simmer until thick. Serve chilled or at room temperature.


  1. What would you recommend if I don't like the taste of cardamom? I'm thinking cinnamon, but is that way off? And what is your natural sweetener of choice for this?

  2. I think cinnamon or nutmeg would both taste great! As far as a natural sweetener, I really like using real maple syrup. Brown rice syrup or honey would both work well too.
