Celery Mushroom Salad

The combination of ingredients may sound unusual, but this simple salad is absolutely delicious!

3 cups celery, washed and sliced
1 cup mushrooms, washed and sliced
2 T olive oil
1/2 cup almonds, blanched, halved and toasted

1. Slice celery and add to boiling pot of salted water. Boil until tender-crisp, 3-4 minutes.

2. Add sliced mushrooms to olive oil in a small skillet. Saute until slightly crisp.

3. Blanch almonds, remove their skins, cut them in half (if desired) and toast them.

4. Combine all ingredients and serve.
