Carob Almond Butter Oat Bars

  • 3/4 cup dairy-free butter, softened
  • 3/4 cup almond or peanut butter (creamy or crunchy)
  • 1 1/2 cups maple syrup
  • 2 teaspoons water
  • 2 eggs or egg replacer
  • 1 1/2 teaspoons vanilla
  • 1 1/2 cups whole-wheat flour
  • 1 1/2 cups quick-cooking oats
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt

  • Glaze:
  • 1 1/2 cups carob chips
  • 1/2 cup creamy almond or peanut butter

  • Heat oven to 325 degrees F
  • Grease a 15 x 10 x 1 inch baking pan
  • In a large mixing bowl, cream butter, peanut butter, syrup and water.
  • Beat in eggs and vanilla
  • Combine flour, oats, soda and salt in separate bowl.
  • Gradually add to creamed mixture.
  • Spread into prepared pan and bake 18 - 22 minutes or until lightly browned
  • In a microwave-safe bowl, melt chips and peanut butter.
  • Pour over warm bars and spread evenly
  • Cool completely on a wire rack before cutting
  • Makes 4 dozen
