Black Bean Vegetable Wrap

3 c black beans, canned, rinsed, drained
3 c brown rice, cooked, cooled
1 ½ c carrots, shredded
1 ½ c lettuce, shredded
1 ½ c red cabbage, shredded
¾ c Italian salad dressing (recipe below)
½ t sea salt
¼ t pepper
12 whole-wheat flour tortillas
12 tomato slices

Combine beans, rice, carrots, lettuce, and red cabbage in a large bowl. Toss with dressing. Season with salt and pepper. Place one cup bean and vegetable mixture on each tortilla; top with a tomato slice and roll up.

Good Seasons Italian Dressing

¼ c white vinegar
½ c olive oil
1 pinch stevia
1 ¼ t sea salt
½ t garlic powder
½ t onion powder
¼ t red pepper flakes
¼ t parsley, dried
¼ t grated carrot (optional)
