Pasta Ole

An easy and delicious meal!

1 pkg whole-wheat pasta
1/2 cup Vegenaise
1 can black beans
1 tsp jalapeno peppers, minced
2 t garlic, minced
2 T fresh parsley, minced
1 cup scallions, sliced
1/2 t ground cumin
1/2 t black pepper
1/4 t salt

1 cup diced tomatoes
1 ripe avocado, sliced in 8 wedges
sliced black olives

Cook pasta according to package directions. Drain. Add the rest of the ingredients. Heat until warm. Garnish and serve.
