3/4 cup spelt flour
3/4 t baking powder
dash Celtic salt
1 T olive oil or coconut oil
1 T honey
1/2 cup rice or nut milk or coconut milk
Stir flour, baking powder, and salt together in medium mixing bowl. Measure oil, honey, and milk into a non-metal measuring cup or small bowl and mix. Heat in microwave briefly (about 30 seconds) to soften honey, and mix well.
Add the liquid ingredients to the dry mixture and mix well, using a whisk if necessary. Add a little more liquid if necessary to make the mixture slightly runny. Pour by spoonfuls onto medium hot griddle. Makes about 10 small (4-inch) pancakes. Serve with maple syrup, applesauce, or 100% Fruit Jelly.
Variation: For waffles, increas amount of oil to 2 tablespoons.
