Oatmeal Cookies

6 T olive oil
6 T rice or nut milk
Egg replacer for 1 egg
1/2 cup maple syrup or other natural sweetener
2 1/2 cups oatmeal
1 cup oat flour
1/2 cup oat bran
1/2 cup spelt flour
1 t cinnamon
1/2 t baking soda
1/2 t salt
1/2 cup raisins
1/2 cup chopped nuts

Preheat oven to 350 degrees. Mix oil, milk, egg replacer, and maple syrup in a medium mixing bowl. Beat well. Add dry ingredients gradually, mixing well. Mix in raisins and nuts. Drop by teaspoons on ungreased cookie sheets and bake about 8 minutes, or until done to suit your taste.
